Sautéed Tomato-Soy Sauce Pork Chops

This one is such an interesting recipe that I think my mom created. She made it for years as I was growing up and it was one of the very first recipes I learned how to make on my own. I made it in college and roommates and friends always loved it. It creates a beautiful flavor that is super unique.
You can serve it with any side you want- for some reason I enjoy this with a baked potato. But rice would be great, or you could even put it over pasta! Testing this recipe I made it for my husband for the first time (he hates tomatoes and pork..) but he actually didn’t hate this meal! And my 10-month old who is working on 100 foods before 1 LOVED the pork!
My mom and I were actually just discussing this recipe last weekend. I was thinking about this upcoming blog post and was planning to suggest chicken as a substitute if you don’t like pork. I mentioned to my mom this was my next recipe and she goes “I love that one! And I’ve tried it with chicken and other meat and it just never tastes the same!”… and I TOTALLY agree. Even if you’re not a huge pork lover, this recipe really needs pork as the protein.
The perfect bite of this recipe would be a juicy, tender piece of pork drenched in the tomato-soy sauce concoction with a chunk of tomato or spinach. Yum!
Serves: 4
Prep time: 5 minutes
Cook time: 25 minutes
Ingredients:
-1/4 cup of olive oil
-4 boneless, skinless pork chops roughly 1 inch thick
-2 cans Hunts fire roasted garlic diced tomatoes
-1/3 cup low sodium soy sauce
-4 cups baby spinach
-salt & pepper to taste

Directions:
1. Heat oil on medium-high heat
2. Pat pork chops dry & season both sides with salt and pepper
3. Put in pan, not touching, and leave for 10 minutes

4. Flip chops and cook for 5 minutes
5. Pour cans of tomatoes over chops and around the pan

6. Add soy sauce over tomatoes, let simmer for 2 minutes
7. Add spinach
8. Sautee and finish cooking roughly 5 minutes

9. Serve warm with your favorite side
