Lemon Butter Baked Haddock & Roasted Green Beans

This is one of my favorite dishes to make year round, but especially in the summer! We eat as much seafood as we can during the summer, luckily living in New England that is easy to do. This is an simple recipe that I’m sure is a staple in other families as well. But this one specifically comes from my Mother-in-Law who makes a great baked haddock!

Easy Peasy Lemon Squeezy this recipe is! (Did I just sound like Yoda there?) Grab some fresh haddock from your local fish market and ask them to take the skin off. I recommend about 1-1.25 lbs for 2 people and double that for 4.


You can make any side with this- sometimes we do rice, baked potatoes or any type of veggie. For some reason I just love simple roasted green beans with this fish. Sometimes I don’t even make a carb to keep it lighter since there’s the Ritz breading on it.


A tip about the crackers.. I love the Ritz stay fresh packs. I buy a big box of them and really only use Ritz for this recipe so the smaller packages help not waste food. This is what they look like:


The Perfect Bite of this recipe is a flaky, meaty piece of haddock with the flavorful butter Ritz, and a fresh squeeze of lemon.



Serves: 2

Prep Time: 5-10 minutes

Cook Time: 25 minutes


Ingredients:

Haddock:

· 1-1.25 lbs of Haddock filets, skin removed

· 2 lemons, 1 halved, 1 sliced into wedges

· ½ stick of butter (unsalted)

· 2 sleeves of Ritz butter crackers (the stay fresh small packs)

· Salt & Pepper to taste

· Parsley (fresh or dried)

Green Beans:

· 1 bag fresh trimmed green beans

· Pepper & garlic salt

· Olive oil


Directions:

Haddock:

1. Preheat oven to 375*

2. Pat haddock dry on all sides, and season with salt and pepper.

3. Place in greased casserole dish.

4. In a small bowl, microwave butter until melted. (30 seconds, stir, 30 seconds, stir, etc..)

5. Crush both packages of crackers and add to medium sized bowl.

6. Add butter to crackers and mix well. Add some parsley to the mix.

7. Top haddock with cracker crumbs.

8. Squeeze a lemon over fish.

9. Add more parsley.

10. Transfer to pre heated oven for 25 minutes or until fish is flakey and no longer opaque.

11. Serve warm with sides!


Green beans:

1. Line a baking sheet with parchment paper.

2. Put green beans in center of sheet and drizzle with olive oil, add salt, and pepper.

3. Mix well with hands.

4. Spread green beans out on baking sheet in a single layer.

5. Pop in oven with 15 minutes left on timer for fish.

6. Mix green beans once halfway through cook time.


*sometimes I add different spices to my green beans, depending on my mood. My current favorite is some dried thyme added while cooking and then a drizzle of balsamic vinegar once they come out of the oven.
