Easy Herbed Focaccia Bread

When I was little my mom used to make focaccia bread (or buy store bought when short on time) and it's one of my favorite sides to a comforting pasta dish. This bread is packed with different flavors from the 3 different herbs used. Use fresh if you have them, but if not, dried works just fine!


My favorite course sea salt is made right from my favorite beaches, located on Cape Cod, MA. When I worked at the beaches as a young adult, I actually watched the men take the water from the ocean, early in the morning, which they then use to extract the sea salt from!

And did I mention how easy it is to make this? All you need is time, but this herbed focaccia will come out perfect every time.


Ingredients:

-2 cups bread flour

-1 tsp garlic salt

-1 cup warm water

-1 tsp instant yeast

-1/2 tsp sugar

-6 tbsp olive oil, divided

-1/2 tsp of each: dried Rosemary, Thyme & Parsley

-3 sprinkles of your favorite coarse sea salt


Instructions:

1. Mix flour and salt.

2. Mix water, yeast and sugar. Let sit for 1-2 minutes until bubbling.

3. Mix into flour and salt until a dough forms.

4. Cover bowl with plastic wrap & put in fridge overnight

5. Remove bowl after at least 8 hours.

6. Drizzle half the olive oil in cake pan to coat bottom & sides. Transfer dough to middle of greased pan, tucking sides under.

7. Cover and let rise an additional 2-3 hours.

8. Preheat oven to 425*

9. Drizzle dough with more olive oil and poke holes in dough with your finger to the bottom of the pan.

10. Sprinkle with herbs and salt.

11. Bake for 22-24 minutes.

13. Let cool in pan for 10 minutes, then transfer to cutting board. Once almost cool, cut and serve!
