Creamy Chicken Bacon Ranch Casserole

With some colder, rainy temps coming the next few days, this is the perfect comfort food! It's an easy weeknight dinner the whole family will love, and there’s always enough for leftovers!


My husband and son both love this dish, and it's gotten rave reviews from followers on Instagram. Let me know how it turns out!

Ingredients:

- 2 cooked chicken breasts, cut into small chunks (or use a rotisserie chicken to skip the cooking step)

- 1 packet ranch seasoning

- 1 head of broccoli

- 8 slices cooked bacon, chopped

-2 cans cream of chicken condensed soup

-8oz sour cream

-1/2 cup chicken broth

-1.5 cups cheddar cheese, divided

-3 cups cooked rice (any variety you want-I use brown)


Directions:

1. Cook chicken, steam broccoli in microwave for 5 minutes & drain, cook bacon, cook rice.

2. Combine all ingredients [except 1 cup of the cheddar cheese] in a casserole dish. Mix well.

3. Sprinkle rest of cheese on top.

4. Bake in a preheated oven at 375* for 20 minutes, then broil until top cheese is bubbly.

5. Sprinkle with more bacon bits if desired.
