Chili Lime Fish Tacos

Prep time: 10 minutes

Cook Time: 15-20 minutes

Makes 6-8 tacos


Ingredients:

  • 1lb of haddock filets or favorite white fish, deboned & skinned

  • Trader Joe’s chili lime seasoning

  • 2 limes, quartered

  • Coleslaw veggie mix

  • Coleslaw dressing

  • Salt & pepper to taste

  • Salsa of choice

  • Sriracha

  • Small Flour or corn tortillas


Directions:

  1. Preheat oven to 350*

  2. Pat haddock dry. Place on baking sheet lined with parchment paper. Season both sides with chili lime seasoning to completely coat fish. Squeeze 1/2 lime over fish.

  3. Transfer to preheated oven. Bake for 13-20 mins or until flakey (will depend on the thickness of your cut).

  4. While fish cooks, make your coleslaw. Add coleslaw mix to bowl with desired amount of dressing. Add salt & pepper to taste. Mix well. Cover with plastic wrap & keep in fridge until ready to serve.

  5. Next, heat a large nonstick skillet on medium heat. Add 2-3 tortillas at a time until slightly bubbling. Flip and brown on the other side. Transfer to serving plate & cover with tinfoil to keep warm.

  6. Remove fish from oven once done, cut haddock into pieces that will fit into tortillas.

  7. Serve with lime wedges, sriracha sauce, salsa & coleslaw.


The perfect bite of this recipe is just what a taco is all about: a little bit of everything! The spice of the chili & sriracha mixed with the lime juice creates such a great contrast.


You can definitely make your own mix of seasoning if you don't have the Trader Joe's version but it is really SO good. You can easily find it on Amazon.
