Chicken Quesadilla with Cilantro-Lime Sour Cream

We love a good quesadilla in this house! There’s sooooo many different ways to make them. This is a classic, simple quesadilla that should have even picky eaters scoffing it down! You can always use shaved steak instead of chicken, or sub out the veggies for your favorite. Sometimes we even toss the chicken in BBQ sauce and make it a BBQ chicken quesadilla.
I’m not going to lie to you, this recipe takes some time. It’s not difficult, but it’s time consuming. A few tricks to make it quicker are to use a cooked rotisserie chicken from the grocery story instead of cooking and shredding your own. Or, boil and shred a ton of chicken breasts to use extra throughout the week in other recipes or for lunches over rice and veggies, etc.
The perfect bite of this quesadilla is a corner bite chuck full of melted cheese, shredded chicken, peppers and onions, dipped in cilantro lime sour cream, finished off with some salsa. Yum!

Servings: 4 quesadillas
Prep Time: 20 minutes
Cook time: 20 minutes
Ingredients:
- 3-4 chicken breasts (roughly 12-16 oz)
- Package of 8 burrito flour tortillas
- 1 red pepper
- 1 green pepper
- ½ red onion
- 8 oz Mexican blend shredded cheese
- Favorite jarred salsa
- 8 oz sour cream
- 2 tbsp. lime juice
- 2 tbsp. chopped fresh cilantro
- Salt and pepper to taste
-1 avocado, cubed
- Trader Joe’s Chile Lime seasoning OR chili powder mixed with lime juice
Directions:
1. Boil chicken in water until cooked through. Shred it by hand, with a hand mixer or in your kitchen aid mixer. While shredding, season with either trader joes Chile lime seasoning or homemade chili lime mix. Set aside.
2. While chicken cooks, chop your veggies into thin slices. Season with salt and pepper. Sautee on medium-high heat until soft. Set aside.
3. While chicken and veggies cook, mix lime juice and cilantro into sour cream. Chill until quesadillas are done.
4. Once chicken, veggies and sour cream are done, start assembling the quesadillas:
5. Spray a nonstick pan with PAM and heat on medium. Put one flour tortilla down, add desired amount of cheese, chicken and veggies. Add more cheese. Put second tortilla on top.

6. Check bottom, once brown, flip the quesadilla. Cook on second side until brown. Remove from heat.
7. Make the next 3 quesadillas in the same way.
8. Cut into quarters and serve with salsa, avocado and sour cream.
